Eggplants (aubergine)

A fancy bowl filled with warm oats, soygurt, and almond butter.  Is there any better way to start the morning?


The usual green tea may be skipped on a hot day like today, but the extra heat produced during the process of cooking and consuming a bowl of oats is worth every wipe of the forehead.  Plus, there is always the option of an ice cold shower immediately following.

The cats and I roasted stayed pleasantly cool inside today with the 2 small air conditioners working their little hearts out.  Dear ConEdison: Kindly forget to read our meter for this month.

Lunch was boring and uneventful.  I am sure that it involved a bowl of puffins, a ww bagel–basically, more breakfast.  This is becoming a trend.

Tonight’s dinner supported Project Clean Out the Fridge.  Look what was hiding in the back:

Through some sort of miscommunication, there are were two giant bunches of kale in the fridge, one of which was pulled out, and chopped up along with the baby eggplants, tempeh, and an onion.  Stir-fried with veg broth, soy sauce, ginger, red chili flakes, and maple syrup resulting in the following served over brown rice:



Yes, this was as good as it looks.  BUT, I am developing a distaste for eggplant.  A note to non-veg restaurants with veg options–grilled eggplant may sound classy, but there are other accessible vegetables out there that are just as fancy.  Also, grilling veggies is not the only way to cook them.  Thank you.

Tomorrow I have a meeting to set everything up at my new job before I start on the 24th.  Excited?  You bet.

  2. eggplant salted and soaked in olive oil .I used the eggplant in my kebobs cooked on the grill
