My friend Diana came to visit this weekend with her husband, Kevin. Her birthday on Tuesday gave me an excuse to bake some killer vegan cupcakes from The Joy of Vegan Baking.
Oh these were good. And look, I finally figured out how to expertly frost a cupcake, complete with swirls.
This was a small little batch, and the second that Di & Kev arrived, we devoured them all.
