Monday, the final day of my long weekend, was spent running errands. Most importantly, James got his hair professionally cut for the first time since I have known him (6.5 years). Pictures coming soon, I’m sure.
Anyway, I started the day with… a bowl of Kashi Heart to Heart and a muffin. No crumbling this time, just a whole soygurt dipped muffin. This was good, but I decided that I do not like cereal that much anymore. I missed my oats.
Skipping over lunch and snacks due to lack of photographs, dinner was a planned meal. Citrus beats and White Gazpacho with Almonds and Grapes.
The beats were cooked in grated orange peel, orange juice, lemon juice, and ground cloves (from The Vegetarian Epicure). Wanting a little more substance, I added some leftover quinoa that was cooked in pineapple juice.
The White Gazpacho is from a recipe that my auntie sent me. Grapes, almonds, cucumbers, soygurt, olive oil, sherry vinegar, salt, pepper, bread thrown into a food processor. This is definitely staying in my recipe binder.
Good eats for a long weekend. Tonight I made another terrific meal that I will need to share with you tomorrow.
